Pizza! (and wedding stuffs)

Jenn and I have had another wonderful weekend, and to top it off we (well, ok, Jenn made it, I just cut up the veggies) made some wonderful home made pizza and breadsticks for lunch today.

Having never worked with dough before did not deter my wonderful better half, and she dove right in kneading like a champ. After a what seemed like no time at all the dough was put aside and given time to rise, and rise it did. Roughly an hour later, some onion, green pepper, and green olives were cut up (my contribution to the day) while the girl put the finishing touches on some breadsticks. Both were put into the oven, and we soon were enjoying some of the absolute best pizza I've ever had the pleasure of sinking my teeth into!

We've also made progress with the wedding planning - we're closing in on full announcements, so stay tuned! We think we've come up with extremely adorable (my description, even) centerpieces for the tables, as well.

More wedding progress

Jeremy and I have been quite busy over the last week working on wedding stuffs. Once we send back the contracts for the reception venue and the DJ, we will have a confirmed date! I don't want to give too much away, but I can tell you this - it will be in about 3 months in Dubuque, Iowa. :)

Now that we know when and where we will be having the reception, we have started to come up with decorating ideas and have even picked up some stuff for center pieces! Some brainstorming with some friends proved helpful the other day as we were able to come up with additional ideas for centerpieces and the guest book. While out looking for table cloths (which we found for about half of what the reception venue wanted to charge us), we stumbled upon the most perfect invites! Not only was the design exactly what we were looking for, but they were also about a quarter of the cost of the invites we were planning on ordering. Needless to say, we picked them up :)

Right now we are working on finalizing the guest list and gathering everyone's names and addresses. It looks like it is going to be quite the party with the preliminary guest list topping out at over 250 people. This makes us quite happy because whenever we tried to define what exactly we wanted for the wedding we kept coming back to the same thing - we just want to have fun. So that is our goal, we will invite all of our family and friends, mix in some drinking and dancing, and see what happens!

Once we have all the contracts returned and everything is confirmed, we will be updating the links on the left under Wedding Information. In addition to the links you currently see, there will also be maps, hotel recommendations, restaurant recommendations, and the ability to RSVP online.

Progress

Well... kind of. Wedding planning is far from the easiest thing in the world. As Jeremy mentioned, we are getting close to having a wedding date finalized. (No, you still don't get to know what it is yet.) We were actually hoping to have one last week but the venue we thought we were going to go with ended up being significantly more expensive than originally anticipated. Luckily I think that we have found another venue that is more what we were looking for and fits better into our budget. Now our biggest problem is trying to figure out what kind of insurance we need for the place. (Yes, apparently if we want to go with this venue we need insurance.)

Of course once we do finally have a date and venue there will be a whole new list of wedding challenges to face. I think I can safely speak for both of us when I say that we are glad we only have to do this once! :)

Holy Vagueness Batman!

So the goal of this post is to provide as much information without actually giving anything concrete out. The uninformative informative post. Let's see how I do.

First an easy one and obvious one: the girl spent at least five hours redesigning the site. I really dig the new layout and theme, so make sure you let her know what you think of the site! The goal all along for this site was to act as our wedding staging area along with chronicling our life together, so I'm glad to see it starting to live up to its full potential, thanks entirely to the hard work and dedication of Jenn :D Yes, I'm a slacker, no you can't help.

Second the girl and I have been kicking around dates, and we're nearing in on complete finalization of a wedding date - and it's sooner than expected! No you don't get to know yet. We're finalizing venues and whatnot, and it's not looking like Chicago for the wedding any longer.

Third, as you can see, on the left the Registry Information link is present (no, it doesn't go anywhere yet). What this means is we're finalizing registries. No, you don't get to know where yet.

Fourth....no fourth that I can think of. No, you don't get to add a fourth.

'Healthy' Pancakes

Ok so they might not be 'healthy' but they are far healthier than any pancake recipe I have ever seen. I fed these to Jeremy this morning and he said you wouldn't even know they were healthier because of how good they taste. These also get bonus points because of how cheap and easy they are to make.

Ingredients:

  • 2 c unbleached flour
  • 3 tsp baking powder
  • 3/4 tsp salt
  • 2 tsp cinnamon
  • 1 3/4c water
  • 3 tsp vanilla extract
  • 5 tbsp sugar free syrup (we like Log Cabin)

Directions:

  • Heat a griddle pan over medium-high heat.
  • In a large mixing bowl, combine flour, baking powder, salt, and cinnamon.
  • In a large measuring cup or small bowl, whisk together water, vanilla extract, and syrup.
  • Add the wet ingredients to the dry ingredients and whisk until no large clumps of flour remain. Do not over mix.
  • Use 1/4 c measuring cup to portion batter onto griddle.
  • Serve with sugar free syrup.
  • Makes approximately 12-14 5-inch pancakes.
